内容	世界の主要柑橘産業の２次製品は大規模に生産されており、濃縮果汁製造で留出するアロマとよばれる果汁蒸留水も、香料産業で利用されています。レモン果汁からのレモンアロマを溶剤抽出して分析すると確認される構造不確定成分群を分析考察して、その一部がモノテルペン系ジオールのモノエチルエーテル、およびモノテルペンに由来するビシクロ型構造を有する成分であることを見出しました。さらに、これらがアロマに含まれている主要香気成分と関係する可能性や、構造の立体学的考察も致しました。

New monoterpenoid derivatives in industrial lemon aroma

Gist

Major volatile components of industrial lemon aroma are terpene alcohols and terpene diols. The volatile oil from the aroma was fractionated by means of C.C. and several fractions contained various components not identified by GC/MS. By extensive experiments including organic synthetic approaches, three oxabicyclic terpenoids, dioxabicyclic terpenoids, and six terpene diol monoethyl ethers were identified as the characteristic components in lemon aroma. Among of them, tetramethyl oxabicyclononane alcohol synthesized from 4R-alpha terpineol was absolutely estimated as (1R,4S,5S,6R) by NOESY and the organic synthesis. Measurements of their enantiomeric ratios in GC/MS on ChiramixTM column revealed that the ratio of the compound in the lemon aroma might be originated in alpha-terpineol (S/R=69/31) in the aroma.
